Every Saturday, I will be posting one of my favorite recipes I have tried recently! Yesterday, I made Pasta alla Vodka for dinner! Easy to make, and the aroma from the cooking was amazing! This recipe was adapted from the site here - be sure to check it out!
Ingredients Needed:
- Sea Salt
- 1 lb.pasta (any variety of your choice)
- 2 tbsp. extra-virgin olive oil
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 28-oz. can crushed tomatoes (or you can use fresh tomatoes)
- 1/2 cup vodka
- Black Pepper
- 1/4 cup heavy cream
- 4 tbsp. cold butter, cut into pats
- 1/2 cup freshly grated Parmesan
- 1/4 cup chopped fresh parsley (or cilantro)
Here's What You'll Need to do:
- Bring an 8-quart stock pot of water to a boil and generously season with salt. Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup pasta water, and return to pot.
- In a large sauté pan over medium heat, heat oil. Cook onions and garlic until softened and fragrant (for about 3 minutes)
- Add tomatoes and vodka and season with salt and pepper. Simmer until alcohol burns off, 8 to 10 minutes. Stir in heavy cream and butter.
- Drain pasta and add to vodka sauce; toss together using tongs. If sauce is too thick, add small amounts of pasta water until desired consistency is reached.
- Top with Parmesan and parsley and mix gently to combine.
- Transfer to a platter and serve immediately. Enjoy!
